Tender Winter Salad

1 Red Chicory
1 Baby Gem Salad
60g rocket
4 Fresh Figs
1 Orange
1/2 Pomegranate
1 Handful of Walnuts 
4 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
Salt and Pepper

1. Prepare the orange segments.
2. Cut the figs into quarters or pieces.
3. Soak the walnuts in water for 10 minutes.
4. Cut and wash the chicory and the gem salad and toss together with all the ingredients.
