Spicy Sweet and Sour Tofu

500g Firm Tofu
4 tbsp Corn Flour or Tapioca Flour
6 tbsp Soya Sauce
4 tbsp Water
4 tbsp Maple Syrup or Agave
2 finely chopped Garlic Cloves
1 tbsp Ketchup
4 tbsp Vegetable Oil
4 tbsp Fresh Coriander Leaves
1 tbsp Rice Vinegar

1. Drain the tofu from packaging liquid and dry with a paper towel. Cut into ½ inch cubes and coat with 2 tbsp corn flour.
2. Bring a large cast iron pan to medium heat, add the vegetable oil and brown the tofu on all sides.
3. While the tofu is cooking, whisk together the rest of the corn flour, soya sauce, ketchup, vinegar, garlic, maple syrup and water.
4. Add the sauce to the tofu and stir for a half minute until it thickens. Keep stirring until the tofu is completely coated, add the coriander and keep serve.
