Pomegranate and Ginger Mocktail

4 Pomegranates
1 Sprig of Fresh Mint
1 Inch of Fresh Ginger
150ml Still Water
100g Sugar
4 Slices of Lemon
Sparkling Water (to fill the jug) 

1. In a small saucepan combine the sugar with the still water, add the ginger, roughly sliced, and simmer until the sugar has completely dissolved and a syrup has formed. Sieve out the ginger and set aside.
2. Cut the pomegranates, keeping a handful of seeds whole and set aside and juice the rest.
3. Mix the pomegranate juice and ginger syrup in a jug with ice and the pomegranate seeds and top with sparkling water.
4. Garnish with sliced lemon and fresh mint.
