Plant Based Pesto Genovese

4 Handfuls Basil Leaves
2 Garlic Cloves
2 tsp Salt
3 tbsp Pine Kernels
6 tbsp Extra Virgin Olive Oil

1. Wash and dry the basil leaves
2. Peel and finely slice the garlic.
3. Using a pestle and mortar, grind the garlic with the salt until creamy. Add the basil and keep grinding until smooth.
4. Add the pine kernels and continue grinding until you have pesto. Add the olive oil and adjust the salt to taste.
